Gluten-Free Apple Crisp with Red Quinoa Streusel

This scrumptious gluten-free desert combines the natural sweetness of the fall’s juiciest apples with the hearty goodness of a protein-rich quinoa. It's the perfect guilt-free addition to conclude any Thanksgiving feast.

Ingredients:

4 Apples, sliced

1/2 cup Date sugar

 NOW Foods Date Sugar

1/4 cup Finely Chopped Ginger slices, crystallized & Organic

NOW Foods Crystalized Ginger Slices

1 tsp Vanilla Extract

1/2 tsp Cinnamon

1/8 tsp salt

1 cup Almond Flour

1 cup cooked Quinoa Whole Grain

1/2 cup Date Sugar

NOW Foods Date Sugar

1/2 cup chopped Honey-Roasted Pecans

3/4 cup Coconut Oil

Instructions: Red Quinoa Streusel

To a large mixing bowl, add the almond flour, cooked quinoa, date sugar, and chopped pecans and mix until well combined.

Next, add in the coconut oil and continue to mix until a coarse texture is formed, then set the streusel aside for later.

 

Instructions: Apple Crisp

Preheat the oven to 350°F and lightly grease a 9 x 9-inch baking pan.

In a large bowl, toss together the apple slices, date sugar, chopped crystallized ginger, vanilla extract, cinnamon, and salt until the apple slices are evenly coated.

Next, transfer the apple mixture onto the prepared pan.

Sprinkle the Red Quinoa Streusel mixture in an even layer over the apples.

Bake the apple crisp for about 18 to 20 minutes, or until the streusel is golden brown.

Allow it to cool for about 10 minutes before serving.

Serve and enjoy!
