Healthy Cinnamon Roll Muffin Recipe

A spice, a flavor and a fragrance so ‘cinn-onymous’ with Thanksgiving and the holidays, that we just had to include a cinnamon favorite on our list of guilt-free holiday recipes. And who doesn't love a good ol’ cinnamon roll anyways?!

The best part, as always, we’ve healthy-fied it for you!

Ingredients:

1 3/4 cup of Raw Almond Flour

NOW Foods Organic Almond Flour

1 tbsp of Organic Coconut Flour

 NOW Foods Organic Coconut Flour

1 tbsp of Baking Powder
4 Large Eggs
5.3 oz of Dairy-Free Yogurt
2 tbsp of Organic Virgin Coconut Cooking Oil, melted

Now Foods Organic Coconut Oil

1 tsp of pure Vanilla Extract
1/4 to 1/2 tsp of Organic Monk Fruit Liquid

 NOW Foods Organic Monk Fruit Liquid

2 tbsp of Ground Cinnamon
4 tsp of Organic Erythritol

Instructions:
Preheat your oven to 350°F.

Prepare your muffin tins by spraying it with some non-stick spray or coat it evenly with coconut oil to avoid your muffins sticking to the pan!

In a large mixing bowl, whisk together the dry ingredients: almond flour, coconut flour, and baking powder, until well combined.

In another bowl, whisk together the wet ingredients: eggs, yogurt, melted coconut oil, vanilla extract, and monk fruit liquid until a cloud-like texture is achieved. This will ensure your muffins are light and airy with a wonderful fluffy texture.

Next, combine the wet and dry ingredients and gently mix until just combined. Be careful not to over-mix, as we want our muffins to be light and airy.

Set the batter aside for later.

In a separate bowl, mix together the ground cinnamon and erythritol. This will create the delicious cinnamon sugar mixture that will add that classic cinnamon roll-feel to our muffins.

Now assemble the muffins by evenly dividing half of the batter into the muffin tin cups and then sprinkling a generous amount of the cinnamon sugar mixture on top.

Next, add the remaining batter on top of the cinnamon sugar layer and using a kebab stick or a toothpick, swirl the batter and cinnamon sugar together to create a beautiful marbled effect.

Pop the muffins into the preheated oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. 

Once removed from the oven, allow the muffins to cool down entirely before removing them from the tin.

Top off these healthy holiday cinnamon spoils with some of the remaining cinnamon sugar mixture for an extra touch of sweetness.

These are healthy enough to indulge in all day! Enjoy as a cozy breakfast with your morning coffee; savor it as a late afternoon treat on the couch as the last sunrays of the day fades away; or spoil the family with this desert after you Thanksgiving feast.
